I started with this recipe and have modified it pretty heavily but you can still check it out here. I am trying to be healthier so I tried to get away from frying everything.
Chinese Chicken and Broccoli
Cubed Chicken Breasts (I tend to use 2)
1 egg white
1 Tbsp plus 1tsp Corn starch
1/4 tsp salt
2 garlic cloves minced
2 Tbsp oyster sauce
2 Tbsp soy sauce
1 tbsp plus 1 tsp water
1 lb Broccoli cut into bit size pieces, I tend to just use the florets and not much of the stalk
1- Mix egg white, 1 tbsp corn starch, salt. Velvet the chicken for 30 minutes in the fridge. (This means to toss the chicken into this mixture, don't over do this mixture or you will have weird egg chunks in your dinner).
2- Mix oyster sauce, soy sauce, and one tbsp water. Set aside. Mix 1 tsp corn starch and 1 tsp water, set aside (in a separate container)
3- Toss chicken into a pre-warmed skillet. After about 4 minutes add the broccoli, garlic, and a dash of salt to taste. Add 1/4-1/2 c of water to deglaze the pan and kinda steam the broccoli.
4- When chicken is cooked add the sauce made in step 2. Then add the thickener made in step 2.
5- Stir around until ready and you like how the sauce looks.
6- Serve over rice.
I am not going to lie this is so yummy. It makes great leftovers so I don't mind eating it for a few days in a row. I think the hardest part is not ending up with supper soggy broccoli. This has happened to me but I think this version of the recipe solved some of that. I think if you only wanted to make one serving you definitely could, as it is I think I tend to eat this 2-3 times depending on how much broccoli there is.
I hope that you enjoy this recipe as much as I do. I am pretty impressed with my skills on this one. Let me know if you try it. I would assume that you could add more or different veggies if you wanted to. So yummy.
